Paolino Bussone

Self-presentation:

Dr Paolino Bussone has a degree in “Economia del turismo” and in “Progettazione e gestione dei sistemi turistici”. He is currently affiliated with the Department of Veterinary Medicine and Animal Production of the University of Naples Federico II. His research topic is food hygiene and safety control of products of animal origin with reference in commercial and collective catering

Project:
Ethnic catering and vending machines: safety and quality assessment of products from Campania Region

Evaluation of the hygienic-sanitary conditions of food distributed by the various forms of public and collective catering that have spread in recent years following the change in trends and social, economic and health conditions. In particular, for public catering the PhD project aims to examine the quality and safety of food and “ready to eat” meals typical of ethnic catering (e.g. sushi, sashimi, poke, etc.) using microbiological and molecular biology analyses. As regards collective catering, the quality and safety of drinks dispensed by vending machines (VMs) (DA) will be evaluated by combining microbiological and molecular biology analyses.
