Giuseppe Palma

Self-presentation:

Giuseppe is a veterinarian specialized in Food Inspection and Hygiene and Infectious Diseases. He is the Secretary General of Assoittica Italia but also President of the Interprofessional Organization of the Fishing and Aquaculture Supply Chain in Italy and Secretary General of the Consortium National Network of Chef Schools for Fish. He is responsible for several projects at national and European level.

 

Project:
Analysis of the seafood supply chain aimed at encouraging a “more confident approach to consumption” by the consumer by identifying a multifactorial orientation based on the morphological characteristics of species, on hygienic-sanitary aspects and on the labelling of seafood products.

Seafood products represent a varied category of foods, which includes fresh, frozen, prepared products, etc., often little known to the consumer. The project aims to deepen the relationship between fish products and the consumer through three approaches aimed at enhancing fish products:
• identification of the main fish species present on the market;
• hygiene and health control to evaluate the risks/benefits related to the consumption of fish products.
• evaluation of the legislation on the labeling of fish products.
The project aims to facilitate a "more confident approach" of the consumer who is increasingly attentive to nutritional, food safety and sustainability aspects.
