Emanuela Galatola

Self-presentation:

Emanuela is a PhD student in Veterinary Sciences (39th cycle) who is carrying out her research at the Institute of Biosciences and Biorisorse of the CNR in Naples. Her research is focused on the concept of circular economy and the development of innovative and eco-sustainable technologies based on the use of extremozymes, for the production of bio-products from agro-industrial waste.

⅓ of all food produced in the world for human use is thrown away and often most waste is not disposed of properly. To limit the damage, many countries are increasingly implementing circular economy programs, a production and consumption model that involves reuse and recycling of materials and products. The PhD project involves using waste from the agri-food chain to obtain high protein content samples, which are subjected to proteolysis reactions for the production of peptide hydrolysates. These molecules are characterized to check for the presence of antioxidant, anti-tumor, and antimicrobial activity.
